Azerai La Residence, Hue expands local culinary offerings with new Vietnamese dishes
Azerai La Residence, Hue has introduced a new selection of Vietnamese and regional dishes at its all-day dining restaurant, Le Parfum, further highlighting the culinary heritage of Hue, Vietnam’s former imperial capital and a key cultural destination in Southeast Asia.
The new menu is curated by Executive Chef Nguyen Dong Hai, who has been with La Residence since 2005 and continues to draw inspiration from Hue’s royal traditions and local culinary practices. The latest additions reflect a balance between time-honoured recipes and contemporary presentation, catering to both regional travellers and international guests.
Among the newly introduced Vietnamese specialties is Hue Royal-Style Braised Duck Leg, slow-braised in Minh Mang wine with aromatic spices, herbs and vegetables, and served with mung bean sticky rice. Another highlight is Hue Five-Spice Roasted Chicken with Turmeric Rice, featuring free-range chicken marinated in locally sourced spices and honey, accompanied by turmeric-scented rice and vegetables.
The menu also includes Hue Caramelized Pork and Prawn cooked in a clay pot, a dish inspired by traditional home-style cooking that remains popular across Vietnam and neighbouring Southeast Asian countries for its comforting flavours and simplicity.
Complementing the local offerings are selected international dishes such as Thyme Semi-Smoked Japanese Wagyu Striploin A5 and Steamed Yellowtail Kingfish with Black Bean Soy, providing a broader range of options for guests with diverse tastes.
Chef Hai has also been instrumental in developing several signature dining concepts at Azerai La Residence, Hue, including The Colonial Life, which blends elements of Nguyen Dynasty cuisine with French culinary influences, reflecting the layered cultural history of the region.
Azerai La Residence, Hue features 122 rooms and suites centred around a historic colonial mansion built in 1930. The property is part of the Azerai portfolio founded by hotelier Adrian Zecha, which also includes Azerai Ke Ga Bay in southern Vietnam.
