Chef Johari: A Culinary Maestro’s Journey Through Five Decades

With a distinguished career spanning five decades in the hospitality and food industries, Johari has held esteemed positions in both corporate and culinary leadership. His journey includes roles such as General Manager at SMTC Sdn. Bhd., Assistant Director of Food & Beverage at Tradewinds Corporation, Executive Assistant Manager at Crowne Plaza Shanghai, R&D General Manager at Ayamas Food Corporation, and Executive Chef at numerous international hotels across Malaysia and beyond. A professionally trained chef, Johari is an alumnus of prestigious institutions, including UiTM, AHMA, and Cornell University. From his humble beginnings as a kitchen apprentice, he has honed his craft in renowned five-star establishments across Malaysia, Switzerland, and China.

Beyond his culinary expertise, Johari has been instrumental in shaping the industry through education and advisory roles. He has served as an Adjunct Professor at esteemed institutions such as UPM and UMK and has contributed as an advisory panel member for both government agencies and private organizations. His expertise in the culinary arts has also earned him a place on judging panels for numerous prestigious competitions, including popular television cooking reality shows like MasterChef Malaysia. His influence extends to record-breaking achievements, with several of his projects earning recognition in the Malaysia Book of Records.

His past works include Cookbook of China (Periplus Edition) and The Durian Cookbook, a collaborative project by Masters of Malaysian Cuisine (MOMC) and the Malaysian Ministry of Agriculture and Food Industries. The latter received global recognition, winning the prestigious Gourmand World Cookbook Award for Best in the World in the Fruits category. Featuring 70 innovative durian-inspired recipes by top Malaysian chefs, the book celebrates the versatility of Malaysia’s beloved fruit.

His flagship restaurant, SYMPHONY by CHEF JO., is a culmination of his extensive experience and passion for international cuisine. Known for its authentic eclectic flavours, the restaurant reflects his modern approach to classic and unpretentious dishes. The contemporary-rustic ambiance, highlighted by warm earthy tones, creates an inviting atmosphere, while the open show kitchen adds a dynamic, industrial touch to the dining experience.
